However, modern fine dining is an area where racist attitudes still exist. Michelin starred Indian restaurants don’t serve authentic dishes, but they’re deemed ‘better’ than restaurants like Prashad, which do. I struggled to see how Benares’ menu was even Indian – do you honestly believe an Indian farmer would know what a ‘ceviche chaat’ or ‘tamarind reduction’ is? Furthermore, Veeraswamy, Kanishka, Quilon and Gymkhana aren’t even fully Halal – Boris Johnson can eat there, but 400+ million Indian Muslims can't. Have a read and ask yourself, does Gymkhana's menu (and prices) honestly represent AUTHENTIC Indian food? Is a 'Chocolate & Clementine Marquise' more recognisably Indian than Ras Malai or Gulab Jamun? Have you ever said "I'm craving a 'Truffle Masala Bhaji'", rather than "I fancy some pakoras"? Why is a 'bread basket' offered? Seemingly, award-winning Indian restaurants, win awards for conforming to Western culinary expectations of Desi food. Basically, authentic Indian food isn’t Michelin star worthy, but Westernised Indian food is. That’s like an Englishman marking a Hindi essay down because it didn’t use English grammar. Is fine dining institutionally racist?
